Turtle Blondie Bars

Welllll these are dangerous! Chewy classic blondie bars topped with dark chocolate chips, pecans and salted caramel. All the classic toppings. The caramel is so easy to make it, no thermometer necessary. It just melts right into the bar and in your mouth. They will be very hard to stop eating…trust me.

Caramel

  • 1 cup granulated sugar
  • 6 tbsp. unsalted butter, room temp
  • 1/2 cup heavy cream
  • 1 tsp. vanilla extract
  • pinch of sea salt

Blondies

  • 1/2 cup un salted butter, melted and cooled
  • 1 cup light brown sugar, packed
  • 1 egg + 1 egg yolk, room temperature
  • 1 tbsp. vanilla extract
  • 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup all-purpose flour
  • 1 cup dark chocolate chips
  • 1 cup chopped pecans

Directions

Starting with the caramel, in a heavy bottomed sauce pan, start by melting the sugar over medium heat. Swirling as it melts. Don’t walk away, keep an eye on it. But it will start to melt and turn a deep golden color. Once it’s all melted and smooth, remove from the heat and add in the butter. It will bubble up and that’s what you want. Once it’s melted pour in the heavy cream and stir with a rubber spatula until it’s all smooth. Stir in the vanilla and salt and then set aside to cool slightly.

~If you don’t use all of the caramel you can pour it into a jar and keep it in the fridge.

For the bars, preheat the oven to 350 degrees. Line an 8×8 baking pan with parchment about 1 inch hanging over the edge.

In a large bowl combine the cooled melted butter with the brown sugar and mix together until smooth with a whisk. Add in the egg and egg yolk, vanilla and mix until all combined. Then pour in the flour, baking powder and salt. Mix with a rubber spatula until it’s all incorporated. Pour batter into prepared baking pan and sprinkle the chocolate chips and pecans over the top. Bake for about 30-35 minutes until it’s puffed up and golden. Let cool slightly then pour the caramel over the top of it.

Sprinkle flaky sea salt over the top. Once the blondies have cooled place in the fridge to continue to chill for about 30 minutes for the caramel to set. Cut into bars and enjoy. They can be enjoyed chilled or at room temperature.
