Frozen Almond Joys

I love these so much! They are the perfect summertime treat. Sweetened up with maple syrup and vanilla extract. The coconut flakes are mixed together with creamy coconut milk and then drenched in dark chocolate ganache, and sprinkled with almonds. They are perfect right out of the freezer!

Ingredients

  • 1 cup shredded sweetened coconut
  • 3/4 cup coconut milk
  • 2 tbsp. maple syrup
  • 2 tsp. vanilla extract
  • 1/2 cup sliced almonds
  • 1 1/4 cup chopped dark chocolate
  • 3 tbsp. coconut oil

Directions

In a food processor with a metal blade attachment, puree together the shredded coconut, coconut milk maple syrup and vanilla just until combined. Remove the blade, and use a spoon and your hands to form little 2-3 inch bars onto a baking pan lined with parchment. Sprinkle a couple of the sliced almonds on top of each bar then place in the freezer for about 15 minutes until firm.

While the bars are freezing, melt the chopped chocolate and coconut oil together in a bowl. Starting with 30 seconds at a time. Stir, and then another 30 seconds until it’s all melted. Grab a wire rack and place on the baking pan. Then using a small spoon dunk each bar individually into the melted chocolate and place back onto wire rack to let any excess drip off. Continue with the remaining bars. Let slightly harden and then drizzle more chocolate over the top and sprinkle again with more sliced or crushed almonds. Place back into the freezer for about 10-15 minutes. Then ready to serve! Enjoy!
