Peanut Butter Fudge Popsicles

Well I can’t love these more! Made with Greek yogurt, maple syrup, cocoa powder, a touch of vanilla and creamy peanut butter. Blended together and poured into popsicle molds to freeze. Then dipped in melted chocolate! These are a perfect summer time treat to cool off with.

Ingredients

  • 2 cups plain Greek yogurt
  • 1/2 cup maple syrup
  • 1/3 cup cocoa powder
  • 2 tsp. vanilla extract
  • 1/4 + 2 tbsp cup creamy peanut butter
  • 1 banana
  • 12 oz dark chocolate chopped
  • 1 tbsp coconut oil
  • sea salt

Directions

In a blender add in the Greek yogurt, maple syrup, cocoa powder, vanilla extract, 1/4 cup peanut butter and banana. Blend it all together, making sure to scrape down the sides, until it’s really smooth. Pour into popsicle molds and let freeze for about 3 hours until frozen.

In a small bowl add together the chopped chocolate, coconut oil and 2 tbsp peanut butter. Place in the microwave for 30 seconds at a time. Stirring in between until fully melted. Dip the popsicles into the melted chocolate and sprinkle with sea salt. Place on baking pan lined with parchment and back into the freezer until the chocolate is set. Enjoy!
