Apple Thyme and Walnut Pastries

With the holidays right around the corner these are perfect for a little appetizer or breakfast. They are so quick and easy to make. Spiced apples cooked down in brown sugar and warm spices along walnuts and a little fresh thyme. They are perfect for individual snacking as the holidays continue and you don’t want anyone else touching your food!

Ingredients

  • 4 medium to small sized apples, peeled and small dice
  • 2 1/2 tbsp. honey
  • 3 tbsp. butter
  • 2 tbsp. brown sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. freshly grated nutmeg
  • 2 tsp. fresh thyme
  • 1 tsp. cornstarch
  • pinch of salt
  • 1/4 cup walnuts
  • 2 sheets frozen puff pastry, thawed
  • egg wash
  • sugar for sprinkling

Directions

Preheat oven to 425 degrees.

In a large saute pan over medium heat melt the butter, honey and brown sugar all together. Add in the apples and walnuts and cook until just fork tender, about 5-7 minutes. Sprinkle in the cinnamon, nutmeg and thyme.

Remove from heat and pour the apples and walnuts over a fine mesh strainer into a bowl to collect all the liquid. Then pour that liquid back into the pan and whisk in the corn starch and pinch of salt over medium heat just until the mixture is thickened. Then pour it back over the apples and walnuts and mix to combine. Let cool slightly while you roll out the puff pastry.

Lay both sheets of the puff pastry out onto a lightly floured surface and gently roll out to about 12×9 inch squares, it doesn’t have to be exact. Brush the pastry with egg wash, then cut each sheet into thirds along the creases and then thirds horizontally so you have even squares. Fill one sheet with the apple filling about 1-2 tbsp for each square. Then place the remaining squares on top, crimp or use a fork to seal the edges. Place on greased baking sheet pan. Brush the tops with egg wash and sprinkle with sugar. Then use a knife and make a little slit in the tops to let the steam escape. Bake for about 15-20 minutes, just until golden and crisp.
