Summer Watermelon Salad

Looking for a really quick throw together salad for that Fourth of July party this weekend?? This is it!! All the summer flavors! Watermelon, nectarines, cucumbers, tomatoes, cantaloupe, herbs and feta, and a couple snap peas just for fun! It’s so versatile and bright with the flavors just bursting! Plus look at all those colors. It’s kind of like a fun take on a fruit salad! I also had a couple fresh half eaten fruits and vegetables (kids) and needed to use it all up. So I threw it all together in a big salad! Violia!

Ingredients

  • 3 cups seedless watermelon, medium dice
  • 1/2 English cucumber, medium dice
  • 1 1/2 cup cantaloupe, medium dice
  • 1 small yellow tomato, medium dice
  • 1 roma tomato, medium dice
  • 1 nectarine, medium dice
  • 1 large handful arugula
  • 1 block feta crumbled
  • 1/2 cup fresh herbs, basil, mint, tarragon, edible flowers
  • 2 tbsp olive oil
  • salt and pepper

Directions

In a large bowl cut everything up about the same size and toss it together. Then crumble the feta over the top and finish with a drizzle of olive oil and salt and pepper. Keep in the fridge until ready to serve! Enjoy!!
