Strawberries and Cream Soda
Strawberries and cream soda, this is such a fun drink to make with the kids! After picking all the strawberries in the fields this season, make this quick simple syrup. Topped with seltzer water or club soda and then topped with a little cold foam cream. It brings me right back to my old days of working in the coffee shop and making these Italian cream sodas. You’ll love it!
Ingredients
Strawberry Syrup
- 1 cup strawberries, green tops removed
- 1 cup granulated sugar
- 1 cups water
- 1/2 lemon juiced
Assemble
- 2-3 oz strawberry syrup
- 8 oz seltzer
- 1-2 tbsp heavy cream, frothed to soft peaks
Directions
Starting with the syrup, in a small sauce pan combine the strawberries, sugar, water and lemon juice together. Bring to a boil and then reduce for about 7-8 minutes. Just until all the sugar is dissolved. Use a fork to mash the strawberries down and they start to loose their red color. Let it simmer for a couple minutes.
Then strain out the strawberries and let the syrup cool completely.
To assemble, fill the glass with ice, 2-3 oz strawberry syrup, seltzer water, and then the heavy cream. Use a little hand frother if you want the soft peaks or just pour the cream directly over the top. Gently mix together and enjoy!
