Mini Frozen Peanut Butter Brownie Cups

Two words..Peanut butter and chocolate…. ok four words… but these little one biters are so fun to make!! Rich dark chocolate hard shell filled with creamy peanut butter and fudgey brownies. I mean what could be better?! And it’s only 4 ingredients!! You can make them mini or large. I bought a little silicone mold online and thought it would be perfect. But you can also use muffin cups.

Ingredients

  • 1 1/2 cups dark chocolate chips
  • 1/4 cup coconut oil
  • 1/2 cup peanut butter
  • 1 cup brownie, chopped (either store bought or homemade)

Directions

Place the chocolate chips and the coconut oil together in a microwave safe bowl and heat in 30 second intervals, stirring between, until completely melted. Spoon a little bit into each mold about 1 tsp. up along the edges and then freeze for about 10 minutes.

In a small bowl mix together the peanut butter and the brownie until smooth-ish. Then spoon into each cup, cover with the remaining melted chocolate. Smooth over the top and pop back into the freezer for about 20-30 minutes. Pop them out and enjoy! Keep in a air tight container in the freezer for up to 1 month!
