Turkey Meatball Sandwiches

Turkey meatballs mixed with lots of garlic and herbs then covered in marinara, basil pesto and lots of cheese. Baked off in the oven until bubbling and golden, sometimes you just have to do it. These are just so good and comforting. Easy enough for a weeknight meal, it’s just a classic you can’t go wrong!

Ingredients

Meatballs

  • 1 lb. ground turkey
  • 3 garlic cloves, peeled and minced
  • 1/2 cup panko bread crumbs
  • 1 large egg
  • 1/4 cup fresh herbs (parsley, thyme, oregano)
  • salt and black pepper
  • drizzle of olive oil

Sandwiches

  • 1 1/4 cups marinara (homemade or store bought)
  • 1 cup basil pesto (homemade or store bought)
  • 6 slices provolone chese
  • 2 petite baguettes or hoagie rolls

Directions

Starting with the meatballs, preheat the oven to 350 degrees.

In a large bowl add in the ground turkey, garlic, panko bread crumbs, egg, herbs and season with salt and pepper. Gently mix together. I use my hands, it’s just easier and doesn’t over mix the meat. Once it’s all mixed together use a small 2 tbsp ice cream scoop and scoop out the meatballs. Using your hands to roll and form them. Place on greased baking pan and bake for about 20 minutes until they are golden and done in the middle.

Cut the hoagies lengthwise, spoon a little of the marinara onto the bottom, then place about 4 meatballs on each roll. Top with more marinara and a couple spoonfuls of pesto. Place the cheese on top and place back onto a baking pan. Broil for about 5 minutes until the cheese is melted and bubbling. Let cool slightly and enjoy!!
