Crispy Buffalo Cauliflower Sandwiches

Hey vegetarians! Where you at?! This is for you!! Everyone has seen the buffalo cauliflower bites going around but what about making it into a sandwich!? I’m telling you this is soo good. The cauliflower is lightly coated in cornflakes and baked until golden tender and crispy! Topped with a blue cheese dressing, a slice of tomato and fresh Bibb Lettuce…. please give it a try and let me know what you think!! I used one big head and got two 1/2 inch steaks out of it. Save any of the extra cauliflower for another use.

Crispy Cauliflower

Ingredients

  • 1 large cauliflower head, trim off the green and cut into 1/2-3/4 inch steaks
  • 3/4 cup all-purpose flour
  • 1 egg
  • 1/3 cup milk
  • 2 cups corn flakes, crushed fine
  • olive oil
  • salt and black pepper
  • 2 burger bugs
  • Bibb lettuce
  • sliced tomatoes

Blue Cheese Dressing

  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/2 cup blue cheese crumbles
  • 2 tbsp. lemon juice
  • 2 tsp hot sauce (I use Franks)
  • 1/3 cup heavy cream

Buffalo Sauce

  • 1/4 cup Buffalo hot sauce (Franks)
  • 3 tbsp butter
  • 1 tbsp. honey

Directions

Crispy Buffalo Cauliflower– Start by preheating the oven to 425 degrees.

In a food processor or plastic bag, crush up the corn flakes into fine crumbs.

Trim the green part off the cauliflower and cut into 1/2 inch steaks. The edges can be saved for another use. Leave some of the stem on the bottom to keep it together. Then in three separate shallow bowls add the flour in one, season flour with salt and pepper; egg wash and then panko in the third one. Lightly dredge the cauliflower first in the flour, then into the egg and last into the panko. Making sure any excess falls off. Place onto a sheet pan with a cooling rack on top. Drizzle a little olive oil on the top, to ensure crispy crust, and continue with the second one. Place in the oven to bake for about 25 minutes. Or until the cauliflower is tender when you insert a fork or knife and perfectly golden brown.

Blue Cheese Dressing– In the food processor combine together the mayo, sour cream, blue cheese crumbles, lemon juice, buffalo sauce and heavy cream. Puree all together until completely combined, making sure to scrape down the sides. Pour into a small bowl and set aside.

Buffalo sauce

In a small sauce pan melt together the buffalo sauce, butter and honey just until melted.

To assemble, toast the burger buns with a little butter until golden. Spoon on a little of the blue cheese dressing, top with Bibb lettuce and tomato slices and then finish off with the crispy cauliflower. Spoon the buffalo sauce over the top and enjoy!!!
