Healthy Pumpkin Spice Bread
Now that it’s fall I love all things pumpkin so I’m adding another one to the list! This quick healthy pumpkin bread is so easy and delicious. Perfect for breakfast or a quick snack. I also love it because it’s got pumpkin puree, coconut oil, maple syrup, spices and no refined sugars at all so you can feel really good about it!
Ingredients
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup or honey
- 2 eggs
- 1 cup pumpkin puree
- 1/4 cup milk, or milk alternative
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground allspice
- 1/2 tsp. ginger
- 1 3/4 cup all-purpose flour
Directions
Preheat oven to 325 degrees F.
In a large bowl combine all the wet ingredients, coconut oil, maple syrup, eggs, pumpkin puree, milk and vanilla extract. Whisk until smooth and combined.
Then sift in the dry ingredients, baking soda, salt, the spices, and flour. Using a rubber spatula or wooden spoon combine it all until it’s really smooth. Pour into greased loaf pan and bake for about 55-60 minutes. Or until a toothpick inserted comes out clean. Let cool slightly, slice and serve warm with a little butter.
