Pumpkin Pancakes

It’s that time of year, fall is in the air and that means pumpkin spice! I make these quick pumpkin pancakes breakfast and they are so easy and delicious. They take about 15 minutes to whip together! Packed with a little pumpkin puree and all the delicious warm spices! Drizzle with good pure maple syrup it’s so good!

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tbsp. sugar (optional)
  • 1 cup all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. allspice
  • 1/2 tsp. ground ginger
  • Pure maple syrup

Directions

In a large bowl combine the wet ingredients, the pumpkin puree, milk, egg, vanilla extract and sugar if you’re using it. Whisk it all together until smooth. Then add in the dry, the flour, salt, baking powder and all the spices. Whisk again until its really smooth and everything is incorporated.

In a large skillet with a little coconut oil or butter heat over medium heat. Add about 1/4 cup of the batter or more or less depending how big you want them. Let them turn a little golden on the edges and the batter will start to bubble in the center. When that starts to happen it’s ready to flip. Cook for another couple minutes on the other side. 4-5 minutes total. When the pancakes seems firm to the touch they should be cooked through, or you can break one open and see. Cook 2-4 at a time depending on size. Remove pancakes from the pan and continue with the rest of them. Keep warm in the oven if you wish. Drizzle with maple syrup and some diced apples if you wish and enjoy!!
