Graza Olive Oil Cake
If you’re looking for that escape to Europe this summer but can’t quite make it happen, make this beautiful olive oil cake using Graza Olive oil. Sit in the backyard with a cup of coffee and relax. This is just so good. The crumb is soft, bright citrus and packed with glorious olive oil.
Ingredients
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 cup Graza Olive oil
- 2 tsp. vanilla extract
- 1 1/4 cup whole milk
- 1 tbsp. lemon zest
- 2 tbsp lemon juice
- 2 cups all purpose flour
- 1/4 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- powdered sugar for dusting on top
Directions
Preheat the oven to 375 degrees.
Line a 9 in round cake pan with parchment and spray with nonstick spray.
In a stand mixer with a whisk or paddle attachment add the sugar, brown sugar and eggs together. Mix until smooth. Then turn the motor down low and slowly drizzle in the olive oil until incorporated.
Then add in the milk and vanilla. Continue to mix on low.
Add in the dry ingredients, flour, baking powder, baking soda and salt. Continue to mix until a smooth batter, making sure to scrape down the sides. Pour batter into the prepared baking pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean. It should be beautifully golden. Use a knife to loosen edges and let it cool completely on wire rack before serving.
Dust with powdered sugar and edible flowers and enjoy!
