Grapefruit and Avocado salad

This is such a refreshing light salad! It’s sweet and tangy from the grapefruit and then a beautiful creaminess from the avocado. YUM <3

For the Lime Vinaigrette:

Ingredients

  • 3 tbsp. fresh lime juice
  • 1/4 cup olive oil
  • salt and pepper

Directions

In a small bowl, squeeze in the lime juice and slowly whisk in the olive oil until combined. Salt and pepper to taste. (Toss the sliced avocado into this so they don’t oxidize and turn brown). Set aside.

For the Salad:

Ingredients

  • 1/2 grapefruit, segmented
  • 1/2 avocado, sliced
  • 1/2 cup arugula

Directions

To segment the grapefruit, cut the top and the bottom off to stabilize the fruit to stand up. Then, with a sharp knife, start cutting the peel off to reveal the fruit. Try and cut as much of the white membrane off as possible; it is a little bitter. After the peel is all cut off, using a paring knife, cut between the white membranes to release the segmented fruit. Set aside.

On a plate, place a little arugula, the sliced avocado, and segmented grapefruit. Top with a little salt and pepper!!

  • Loved this recipe also. Who would have thought to put grapefruit and avocado together. It was a hit at our house! Another easy recipe.
