Frozen Whipped Strawberry Lemonade

Well it’s almost Memorial Day weekend and all I keep thinking about is ice cold lemonade in particular those Italian lemon ice. I haven’t had them in years and forgot how delicious they really are. But with the temperatures rising outside this is a perfect drink to cool off. Fresh squeezed lemon juice, a little sweet simple syrup, beautifully ripe strawberries, creamy coconut milk and ice. Blend all of it together and it’s so good!

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 lemon zested
  • 1/2 cup lemon juice (2 lemons)
  • 1 cup full fat coconut milk
  • 1/2 cup fresh strawberries
  • 1 handful ice cubes

Directions

Start by making the simple syrup, in a small sauce add in the lemon zest, water and sugar. Bring to a boil and cook for a couple minutes until the sugar dissolves. Remove from heat and let sit for about an hour, then strain out the zest.

In a blender add in the cooled simple syrup, lemon juice, coconut milk strawberries and ice cubes. Blend up until it’s completely smooth and slushy like, pour into chilled glasses and garnish with a lemon slice. ENJOY!
