Berry Oatmeal Bars

These berry oatmeal bars are filled with a beautiful bright berry filling and topped with a buttery spiced oatmeal crumble on top. They are great for breakfast, quick snack or dessert. Keep them in an air tight container in the fridge for up to 4-5 days. You can also switch up the berries if you wish too, use whatever is in your fridge!

Ingredients

  • 6 tbsp. unsalted butter or coconut oil melted
  • 1 tsp. vanilla extract
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. fresh grated nutmeg
  • 1 cup all-purpose flour
  • 1 3/4 cup old-fashioned oats (not instant)
  • 1 cup hulled strawberries cut in quarters
  • 1 cup raspberries (if using frozen make sure to thaw and drain any access liquid)

Directions

Preheat the oven to 350 degrees.

Line the bottom of 8×8 baking pan with parchment paper or cooking spray.

In a large bowl combine together the butter, vanilla extract, sugar and the honey. Mix all together. Then add in the cinnamon, nutmeg, oats and flour. Using your hand mix together until it forms a crumble. It should be pretty dry and crumbly. Remove 1 cup of the mixture and set aside for the top. Press the rest into the bottom of the prepared baking pan, so it’s all even and flat. Set aside.

For the filling, in a medium bowl add the berries together, you can add a little more sugar if you want to sweeten them more and to help the berries break down but it’s up to you. Using a fork or potato masher, mash the berries down so there are no more big pieces. Spread the mashed berries over the top of the oat crust mixture and sprinkle the remaining crumble on top. Bake for about 25-30 minutes. Just until bubbly and golden on top. Let cool completely before cutting into it. Serve by itself or with a little ice cream!
