Balsamic Truffles

Happy almost Valentine’s Day loves! I never need an excuse to eat chocolate, I love it in every way. But these are such a fun way to spread the love this V-Day.  The balsamic gives the chocolate a little extra intense complex sweetness that just goes perfectly in these truffles. You can really pick any kind of flavor to pair with chocolate. What better way to share the love than with homemade truffles?!

Ingredients

  • 8 oz. semi sweet chocolate
  • 1/2 cup heavy cream
  • 1 tsp. vanilla extract
  • 2 tbsp. aged Balsamic Vinegar
  • 1 tsp. instant espresso powder
  • 1 cup cocoa powder

Directions

Place a medium bowl on top of a sauce pan with 2 inches of water on the bottom. This is called a double boiler. Place the chocolate, heavy cream, vanilla, balsamic vinegar and espresso into the bowl and turn the heat to medium high. Stirring until all the ingredients are just melted together about 5-10 minutes. Let cool for a minute. Then place in the fridge for at least 4 hours until completely firm. Place the cocoa powder in a small bowl. Using a small melon baller or teaspoon start rolling the balls into your hand and place the balls into the cocoa powder, gently rolling it until all covered. Don’t worry if they aren’t perfect round, they aren’t supposed to be, they’re homemade. Set aside on plate until all are coated. Chill again for an hour. Package up and share with your loved ones! Makes for such a rich decadent dessert!
