Almond White Hot Chocolate with peppermint marshmallows

Who can resist a nice warming cup of holiday cheer over the holidays? I know I can’t! I made up the perfect little cup. I used almond milk to switch it up and add a little nutty richness. Out shopping the other day, I found the peppermint marshmallows and couldn’t resist buying them, so this is what I came up with.

Ingredients

  • 1 1/2 cups almond milk
  • 1/4 cup heavy cream
  • 2 tbsp. granulated sugar
  • 1 tsp. vanilla extract
  • 6 oz. white chocolate

Directions

Place all ingredients into a small sauce pan and turn heat up to medium. Heat until small bubbles form about 4-5 minutes and the chocolate melts. Continuously whisking. Pour into coffee mugs. Garnish with whipped cream, peppermint marshmallows or a candy cane!

 

Whipped Cream

Ingredients

  • 1 cup heavy cream
  • 1 tbsp. powdered sugar
  • 1 tsp. vanilla extract

Directions

In a bowl with an electric mixer and whisk attachment, combine the heavy cream, sugar and vanilla. Beat on medium high-speed until soft peaks form about 3 minutes.
