Date Bark

I was skeptical about this at first. But honestly the dates melt in your mouth like caramel. They are flattened out on a tray and layered with pretzels, peanuts a little coconut, a drizzle of peanut butter and covered in melted dark chocolate filling up all the holes between the dates. Then topped with flaky sea salt. It’s really the perfect sweet treat after dinner. Think of it like a healthier snickers bar and trust me you wont regret it!! I will be keeping a bag in my fridge until further notice!!

Ingredients

  • 1 cup medjool dates, pitted
  • 1/2 cup roasted peanuts
  • 1/4 cup shredded coconut
  • 1/3 cup pretzels, crushed up
  • 1/2 cup creamy peanut butter, melted
  • 1 1/4 cup dark chocolate chips
  • 2 tbsp. coconut oil
  • Flaky sea salt on top

Directions

Line a rimmed baking pan with parchment paper. Set aside.

Pit the dates and place them onto the parchment next to each other in a flat layer into a rectangle shape. Cover with another piece of parchment paper and use a rolling pin to flatten and roll the dates out, to a thin layer. Remove the paper and sprinkle evenly over the top of the dates the peanuts, coconut and crushed pretzels.

Drizzle the melted peanut butter evenly over the top.

In a small bowl combine the chocolate chips and coconut oil. Melt together for 30 second increments stirring in between until fully melted. Pour evenly over the top of the dates. Place in the freezer for about 10 minutes just until set. Sprinkle the flaky sea salt over the top and break or cut the bark into pieces and enjoy! Keep in an air tight container in the fridge.
