White Cheddar Salt and Pepper Crackers

Better than store bought, these crackers are light and crispy, lots of cheese and so addicting! They are the perfect little snack in the afternoon or evening, maybe for a cocktail party? Plus they are kid approved, Louie couldn’t stop eating them as well. I finished them off with flaked sea salt and fresh cracker black pepper and it’s just the best.

Ingredients

  • 1 (8 oz) block of aged white cheddar, grated, about 3 cups
  • 1 cup all-purpose flour
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. kosher salt
  • 6 tbsp. cold unsalted butter cut into cubes
  • 2 tbsp. cold water
  • Flaky sea salt and fresh cracked black pepper on top

Directions

Preheat the oven to 350 degrees, and line two baking sheet pans with parchment paper.

In a food processor with a metal blade attachment combine the grated white cheddar along with the flour, smoked paprika, onion powder, garlic powder, and salt. Pulse until the cheese is mixed into the flour. Add in the cubed butter and pulse until it forms little pea size and crumbles into the flour. Kind of like making pie dough. Then pour in the cold water and pulse it another couple times just so the dough starts to come together.

Once it comes together, pour out onto a floured surface and form into a disk. Cut the dough into quarters and work with one section at a time. Roll out as thin as you can with out ripping it, about 1/4 inch thick. Then cut the edges to form a large square. Transfer the square onto the prepared baking pan and cut into little 1/2 inch squares. Spread them all out a little. Sprinkle the flaky sea salt over the top and the cracked black pepper. Using a fork prick each one in the center to release the steam. Bake for about 15 minutes until they are golden. Once cooled transfer to an air tight container for up to one week. Enjoy!!
