Turkey and Vegetable Udon Noodles
These noodles are great when you are looking for something on the healthier side instead of takeout. Packed with ground turkey and lots of vegetables stir fried together with a sweet, salty, garlic ginger sauce, you will have dinner not he table in about 30 minutes. You can’t go wrong with a great noodle bowl.
Garlic Ginger Soy Sauce
- 4-5 garlic cloves, peeled and minced
- 1 inch fresh ginger, peeled and minced
- 1/3 cup rice wine vinegar
- 1/2 cup soy sauce
- 2 tbsp. honey
- 1/3 cup brown sugar
- 1 tbsp. sambal
- 1 tsp. sesame oil
Ground Turkey and Vegetable Udon Noodles
- 1 lb. ground turkey
- 1 cup mushrooms, sliced
- 1/2 red bell pepper, seeded and julienne
- 1/2 cup broccoli florets
- 2 (7 oz) packages udon noodles
- cilantro, scallions and black sesame seeds for garnish
Directions
Starting with the sauce, in a small bowl combine together the garlic, ginger, rice wine vinegar, soy sauce, honey, brown sugar, sambal and sesame oil. Whisk all together until combined and set aside.
In a large skillet with a little oil start by browning the ground turkey over medium heat. Season with salt and pepper, and once it’s mostly browned through remove from the pan onto a plate and set aside. In the same skillet add in the vegetables and cook just until they start to get tender and cooked through, you may have to add a little water or stock to cook all the way through, about 6-8 minutes. Once the vegetables are cooked add the ground turkey back in along with the sauce. Cook the noodles according to package and then add into the turkey and vegetables. Use a tongs to mix everything and get all the noddles covered in the sauce. Serve in big bowls and garnish with cilantro, scallions and black sesame seeds! Enjoy!!
