Sweet Potato Pull Apart Dinner Rolls

What more could you ask for?! These are soft buttery pillows of dough that are just so easy to make! Think of a regular potato roll but this time I switched it up and added mashed sweet potato! It just give it that extra little sweetness! They are so delicious and will be a great side to sop up any of that extra gravy on your thanksgiving plate! I also top it with a little extra butter because why not? and flaked sea salt! They won’t last long!

Ingredients

  • 3/4 cup warm water
  • 2 1/2 tsp. instant yeast
  • 2 tbsp. honey
  • 2 large eggs
  • 1 cup mashed sweet potato*
  • 1 1/2 cups whole wheat flour
  • 3 cups all-purpose flour
  • 1 tsp. kosher salt
  • 6 tbsp melted unsalted butter plus 2 tbsp. for brushing on top
  • flaked sea salt for topping

Directions

In a large mixing bowl with the dough hook add in the warm water, yeast and honey. Let it sit for about 5 minutes just until the yeast gets all foamy and starts to activate.

Then add in the eggs, mashed sweet potatoes, whole wheat flour, all-purpose flour, salt and 6 tbsp. melted butter. Mix everything together on low speed just until it starts to come together and everything is incorporated. Mix for about 4-5 minutes. Grease the bowl and let sit in a warm spot for 1 hour until double in size.

Once risen punch it down and form into 12 dough balls. Place in prepared greased baking dish and let rise for another 30-35 minutes. It’s ok if they touch a little bit.

Preheat the oven to 350 degrees F.

Bake the rolls for about 20-25 minutes just until they are puffed up and golden brown on top.

While they are baking melt the remaining 2 tbsp. butter and place a rosemary sprig in it if you want to infuse into the butter. Totally optional.

Once the rolls are baked brush the melted butter on top and finish with the flaked sea salt. Watch how fast they disappear!! Enjoy!

*To mash the sweet potato, peel and cube into small- medium dice and place into boiling salted water for about 15-20 minutes just until fork tender. Strain and mash them up.
