Sun dried tomato Blue Cheese and Chive Scones

I made these scones the other day and every last one was taken! They are so light and fluffy with sweet and chewy sun-dried tomato chunks of rich blue cheese, tastefully accented with chives. Serve with a side salad and it’s perfect for brunch or lunch. These scones can be stored in an air tight container for up to a week. Change up the flavors of the scones and be creative with it!

 

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup white sugar
  • 5 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup butter, cold and diced
  • 1 egg
  • 1 1/2 cup buttermilk
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup blue cheese
  • 2 tbsp. chives, minced
  • egg wash

Directions

Preheat oven to 400 degrees F. Lightly grease sheet pan or place parchment on top.

In a large bowl, combine flour, sugar, baking powder, salt. Whisk together. Using either a pastry cutter or your hands cut in the butter until it is small pea size in the flour. Mix in the egg and buttermilk until everything is moistened and combined. Make sure to not over mix the dough or it will get tough. It should be a light sticky dough. Gently fold in the sun-dried tomatoes, blue cheese and chives until all combined.

Using an ice cream scoop, scoop out dough onto prepared baking sheet about 2-3 inches apart.

Brush egg wash over the scones and sprinkle a little salt and pepper over the top.

Bake for 15 minutes or until lightly golden. Enjoy immediately!
