Summertime Popsicles
So who else is as excited about summer as I am?! I just got these awesome popsicle molds and am loving all the homemade fruit popsicle. I bet your kids will be lining out the door for them!
Top left:
Mango Watermelon
Ingredients
2 cups watermelon, diced
1/3 cup water
1 cup mango, diced
Directions
In a blender, blend together the watermelon and water until smooth. Pour into popsicle molds. Then carefully place a couple pieces of the diced mango into each mold. Place the sticks into each mold and freeze for about 3 hours.
Top Right:
Blueberry Coconut
Ingredients
1 cup blueberries, frozen or fresh
1/3 cup water
1/2 cup coconut milk
1 tsp. vanilla extract
Directions
In a blender blend together the blueberries and water until smooth, pour into a small glass, and set aside. Rinse out the blender and blend together the coconut milk and vanilla. So first pour the blueberry juice into the Zoku mold. Let the outside form an outer frozen shell, about 5 minutes. Take a straw and sip out the center. Then finally pour in the coconut vanilla milk and let freeze completely.
My new favorite mold! I got it from William Sonoma and it comes with three popsicle sticks. Keep it in the freezer and the pops should freeze with in 5 minutes.
Bottom Right:
Watermelon Mint Popsicle
Ingredients
1 cup watermelon, seeded and diced
5-6 sprigs of mint
1/4 cup water
Directions
Place all ingredients into blender and blend until smooth. Pour into molds and let freeze.
These are also fantastic popsicle molds that my amazing husband found on Amazon! They work amazing and you can make a lot of them at a time and keep them in the freezer.
Bottom Left:
Mango Cantaloupe
Ingredients
1 cup Mango peeled, seeded, diced
1/2 cup Cantaloupe, peeled, seeded, diced
1/4 cup water
If you would like to buy the mango frozen that works as well, but if you buy it fresh,cut each end of it off and stand it up right. With a sharp knife slice the skin off and cut around the pit to reveal the fruit. Then combine all ingredients into the blender and blend until smooth. Pour into molds and let freeze for about 3 hours until frozen.
