Summer Salad with young herbs, baby fennel, strawberries and gorgonzola

This is one of those first garden summer harvests. There’s something so satisfying about growing produce. To be able to go out of your backyard and grow this all is so magical. Life is brought back into the yard again. With only a few simple ingredients this salad can be put together in no time.

Ingredients

  • 3-4 big handfuls of mixed greens and baby spinach
  • 1/2 cup blueberries
  • 1 cup sliced strawberries
  • 2 baby fennel or 1 medium, sliced
  • 1/2 English cucumber, sliced
  • 1/4 cup of sweet cherries
  • 1/4 cup crumbled gorgonzola
  • 1/2 cup young herbs, (basil, mint, fennel fronds, carrot leaves, celery leaves, edible flowers

Directions

Assemble all in a large bowl, toss with the vinaigrette and garnish with the young herbs.

Honey Yogurt Vinaigrette

  • 1/4 cup apple cider vinegar
  • 2 tbsp honey
  • 3 tbsp. greek yogurt
  • 1/2 cup olive oil
  • salt and pepper

Pour all into a mason jar, close with a lid and shake until emulsified. Then pour over the salad. If there’s any left over it will keep in the fridge for about 4-5 days.
