Spicy Honey Ginger Noodles
I feel like during the winter I could eat spicy noodles every day! There is just something so warm and comforting about it. These are super quick and easy noodles. You can always make them with no vegetables as well but I love the colors too much! Forget that take out, grab some sweat pants, chop sticks and good show because you got a bowl of noodles!!
Ingredients
- ¼ cup soy sauce
- ½ cup mirin or rice wine vinegar
- 1 tsp. sesame oil
- 1 tbsp. sambal chili paste
- 1 tsp. black sesame seeds
- 4 fresh garlic cloves, sliced
- 2 tbsp. honey
- 500 g. chow mein noodles
- 1 bunch green onion, sliced
- 1 tbsp. fresh ginger, minced
- 1 lime, juiced
- 2 tbsp. vegetable oil
- 1 bunch cilantro
- A bunch of assorted vegetables: mushrooms, peppers, cucumbers, red cabbage,
Directions
In a small bowl combine the soy sauce, mirin, sesame oil, sambal chili paste, black sesame seeds, garlic, and honey. Whisk together until all combined.
Bring a large pot of water to boil. Cook noodles for about 3 minutes or package directions. You want them to have a slight bite to them. Drain.
Heat 2 tbsp. oil over medium heat sauté your assorted veggies until tender. Add the drained noodles and sauce and cook until all sauce is absorbed. Sprinkle the scallions and any raw veggies you want on top. Serve immediately.
