Pea Pesto Crostinis

These are the perfect little appetizers! I made them for my friends baby shower. So light and fresh, the herbs just brightens it right up. The pesto would be perfect to spread on a pizza or sandwich as well!

 

Ingredients

Pesto

  • 1 (10 ounce) bag of frozen, defrosted.
  • 2 garlic cloves
  • 1/2 cup parmesan cheese
  • 2 tbsp. fresh mint
  • 1 tbsp. basil
  • 1/3 cup extra virgin olive oil
  • Season with salt and black pepper

Crostini

  • 1 baguette, 1/2 inch sliced (preferably one day old)
  • Olive oil
  • Salt and pepper
  • 1 cup cherry tomatoes, halved

Directions

Pea Pesto: In a large food processor with a metal blade attachment, pulse together the peas, garlic, parmesan, herbs, salt and pepper. About 1 or 2 minutes. With the machine running slowly add the olive oil until all combined. Make sure to scrap down the edges. Transfer to a small bowl and set aside.

Crostini: Preheat the oven to 375 degrees F. Lay out the baguette slices on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for about 8-10 minutes until just crisp and golden. Top with the pesto and one halved tomato. Serve immediately and enjoy!
