Roasted Cauliflower Mac and Cheese

I’m so exited about this one! Dinner is ready in just about 30 minutes! The cauliflower cheese sauce is so rich and delicious! I added a little into the dish for texture as well. I roasted the cauliflower to give a little added flavor then puree it and cook it together with a little bit of coconut milk, garlic, and cheese and it becomes this rich velvety cheese sauce. It’s almost healthy, with all the cauliflower. You feel a little better about eating it. So easy, and so good!

Ingredients

  • 1 small head of cauliflower, cut into florets
  • 1 tbsp. olive oil
  • salt and black pepper
  • 1/2-3/4 cup chicken stock
  • 1 lb elbow pasta
  • 3/4 cup full fat coconut milk, or whole milk if you want
  • 2 oz cream cheese
  • 1/2 cup shredded mozzarella
  • 1 cup shredded white cheddar
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 2 tbsp. butter
  • 1 cup panic bread crumbs
  • 4 garlic cloves, peeled and minced
  • 1 tbsp. thyme

Directions

Preheat the oven to 425 degrees.

Cut the cauliflower into little florets and spread them out onto a sheet pan, pour over the olive oil and season with salt and pepper. Bake in the oven for about 10-15 minutes until they are tender and golden brown.

Bring a large pot of salted water to a boil. In a blender add half of the cauliflower and save the rest to throw into the Mac and cheese later. Puree the cauliflower with the chicken stock just until smooth. Pour into a skillet with 2 of the chopped garlic cloves, over medium heat, add in the cream cheese, mozzarella and white cheddar, onion powder and smoked paprika. Whisk it all together to make a smooth cheese sauce. While that is cooking, cook the pasta for about 7-8 minutes just until al dente. Drain the pasta and add to the cauliflower cheese sauce, add the remaining roasted cauliflower, make sure to season good with salt and black pepper. Mix it all up!

For the bread crumb topping, melt the butter and add the other 2 cloves of garlic, bread crumbs and thyme, over medium heat and cook just until the bread crumbs turn golden. Sprinkle over the top of the Mac and cheese. At this point you can either eat as it is or bake in the oven for 5-7 minutes. Spoon into bowls, and serve!! Enjoy!!
