Raspberry Almond Waffles with Fresh Fruit
I made these the other day for Father’s Day! It’s kind of our thing when I’m home, to make breakfast together. But this time I wanted to switch it up and make something special for him. He absolutely loved them! Then when adding the raspberry and almonds it’s a fun new twist on just the ordinary waffle.
Ingredients
- 2 cups all-purpose flour
- 2 tbsp. granulated sugar
- 1 tbsp. baking powder
- ¼ tsp. salt
- 2 medium-sized eggs
- 1 ¾ cup milk
- 1 tsp. vanilla extract
- ½ tsp. almond extract
- ½ cup vegetable oil
- ½ cup almonds, sliced, toasted
- ¾ cup raspberries
Directions
Preheat your waffle iron. (Make sure to spray the waffle iron between each time you add the batter.)
In a large bowl combine the flour, sugar, baking powder, salt. Whisk together. In a small separate bowl combine all the wet ingredients, eggs, milk, vanilla extract, almond extract, and vegetable oil. Slowly pour into the dry ingredients. Mix together with a wooden spoon until combined. Batter will be thin and slightly lumpy. At the end gently fold in the raspberries and almonds. Smash the raspberries slightly if you would like more of a marble effect.
Then in the preheated greased waffle iron pour about 1 cup of the batter in the middle and close the lid. Let cook for about 5-7 minutes until steaming stops and turns golden brown on the edges. Carefully remove from iron and continue. Cover waffles with a towel to keep warm. Garnish with the Apple Maple Syrup and fresh fruit!!
Apple Maple Syrup
Ingredients
- 1 cup pure maple syrup
- 2 granny smith apples, large dice
Directions
Pour syrup and apples into a small sauce pan and heat up until warm and apples are softer, on medium heat.
