Chewy Banana Chocolate Chip Granola Bars

Who doesn’t love a good easy granola bar?! These are super fast and packed full of healthy delicious flavor. They are perfect to make for a snack on the go and kids will love them too! I had a couple of bananas that I had to use up, so what better way.

 

Ingredients

  • 2 cups regular or quick oats
  • 2 tbsp. chia seeds
  • 1/2 cup almonds, sliced
  • 1/4 cup dried cranberries
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 1/2 medium ripe bananas mashed
  • 1/4 cup almond butter (or any other nut butter)
  • 1/4 cup honey
  • 2 tbsp. almond milk
  • 1/2 tsp. vanilla extract
  • 1/4 cup dark chocolate chips

Directions

Preheat oven to 350 degrees F and line an 8×8 inch baking pan with parchment paper, letting a couple of inches hang off the edge. Set aside.

In a large mixing bowl combine oats, chia seeds, almonds, cranberries, salt and cinnamon. Set aside. In a separate medium-sized mixing bowl combine the wet ingredients. Mash the banana and add the almond butter, honey, almond milk, and vanilla extract. Whisk together until smooth. Pour the wet ingredients into the dry and mix until everything is fully incorporated. Fold in the chocolate chips.

Press the mixture into the prepared pan. Using your hands, kitchens best tool, spread the mixture so it’s even in the pan. Bake for about 18-20 minutes until the top is set and the edges begin to turn golden brown. Remove the pan from the oven and let cool for about 15 minutes. Using a sharp knife cut into the bars and store them in a sealed container. Enjoy!!
