Pumpkin Whoopie Pies

I made these the other day for my brother’s wedding reception. They literally flew off the platters. They are such a perfect little handheld dessert. People could just grab them and be on their way. They are perfectly moist and spiced little cakes with a whipped cream cheese in the middle. Perfect for any fall gathering!!

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tbsp. ground cinnamon
  • 1/2 tbsp. ground ginger
  • 1/2 tbsp. ground cloves
  • 1/2 tbsp. freshly grated nutmeg
  • 2 cups brown sugar
  • 1 cup vegetable oil
  • 3 cups chilled pumpkin puree
  • 2 large eggs
  • 1/2 tsp. vanilla extract

Directions

Preheat oven to 350 degrees F.

In a large bowl combine all the dry ingredients, the flour, salt, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg. Whisk all together until combined.

In a separate bowl combine the brown sugar, vegetable oil, and chilled pumpkin puree. Mix all together until smooth then whisk in the eggs and vanilla until fully incorporated.

Sprinkle the dry ingredients into the pumpkin mixture. Whisk until everything is completely smooth and combined.

Using a medium ice cream scoop or spoon scoop the dough onto a greased prepared baking sheet. About one inch apart.

Bake for about 10-12 minutes, just until the cookies start to crack on the edges, and a toothpick inserted in the center comes out clean. Remove from the oven and cool completely. While they are cooling make the filling.

Cream Cheese Frosting

Ingredients

  • 8 oz softened cream cheese
  • 1 stick (1/2 cup) softened butter
  • 2 1/2 cups powdered sugar
  • 1 tsp. vanilla extract

Directions

In a large bowl with an electric mixer with the whisk attachment, mix together the cream cheese and butter until it’s really whipped and smooth. Make sure there are no lumps.

Sift in the powdered sugar and add in vanilla extract. Continue mixing until really smooth and combined. Making sure to scrape down the sides.

Start to assemble the whoopie pies, use an ice cream scoop or spoon and place a little bit of the filling on the bottom side of the cookies and top it with flat side down with another cookie, press together and set aside. Continue with the rest of the cookies. Place them in the fridge for 20-30 minutes just to set before serving. Enjoy!!,
