Mini Banana Pancakes
Looking for a really easy delicious breakfast?! These little mini banana pancakes are the best. Only a couple pantry ingredients and the kids will love them. Plus who doesn’t love pancakes on the weekend? It’s also a great way to use up any over ripe bananas.
Ingredients
- 1 overripe banana
- 1 cup all purpose flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 cup milk
- 1 egg
- 1 tsp. vanilla
- 1 tbsp. granulated sugar (optional)
- Maple syrup and berries on top
Directions
In a large bowl add in the banana and using either a potato masher or fork mash it up. Pour in the flour, salt, baking powder, cinnamon, milk, egg, vanilla and sugar if you are using. Mix it all together with a wooden spoon or whisk, until everything is evenly incorporated and there are no big lumps.
Heat a non stick skillet up with a little tab of butter over medium heat. Once it’s melted. Drop 2 tbsp of batter on to make each pancake. Make sure not to crowd the pan with too many cooking at a time. Cook for about 3-4 minutes on each side or until they start to bubble and turn golden brown on the bottom. Flip and finish cooking on the other side. Continue with the rest of the batter.
Once they are all cooked pour a little maple syrup and finish with some berries! They are the best!!
