Melon Tomato Burrata Salad
This is my new favorite summer salad! It’s so bright and flavorful! The juicy tomatoes and sweet melon balance out perfectly with the creaminess of the avocado and burrata, brought to life by the fresh herbs. A little drizzle of olive oil and a sprinkle of salt and cracked black pepper, it’s just the best.
Ingredients
- 1 cup cantaloupe, large dice
- 1 large tomato, large dice
- 1/2 avocado, diced
- 1 burrata cut in half
- drizzle of olive oil
- salt and black pepper
- fresh herbs
Directions
In a small bowl toss together the cantaloupe, tomato and avocado. Place on serving plate. Then cut the burrata in half and add to the plate, along with the fresh herbs. Drizzle olive oil over the top and season with salt and black pepper. Enjoy!
