Korean (Bulgogi) Beef Tacos

Korean Beef Tacos! These are going to be on repeat over here! The beef is so tender from the Asian marinade the pears help tenderize it a little bit, and add sweetness. Then since the meat is already sliced you just throw it in the skillet and the combination of the soy sauce and brown sugar will caramelize and get a beautiful char on the beef. Topping it with crunchy red cabbage, big chunks of avocado and a spicy lime crema and a couple jalapeños to spice it up even more. I’m telling you, you’re going to want to make these!

Bulgogi Marinade

  • 1 tbsp. sesame oil
  • 1 1/2 cups low sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 4-5 garlic cloves, smashed
  • 1 inch ginger, peeled and grated
  • 1/2 cup water
  • 1/2 Bosc pear, sliced
  • salt and black pepper

Korean Beef Taco

  • 1 1/2 lb flank steak
  • 6 flour tortillas
  • 1 cup freshly shredded purple cabbage
  • 1/2 avocado, diced
  • cilantro
  • lime wedges

Siracha Lime Crema

  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 2 tsp. siracha
  • 1 lime juiced
  • 1 tsp. honey

Directions

In a 9×13 inch baking pan combine the ingredients for the marinade and give it a good whisk. Slice up the flank steak into thin slices and place in the marinade. Cover it and let it sit in the fridge for about 30 minutes to 2 hours.

Heat a skillet over medium high heat, let some of the marinade drip off a little before placing in the hot skillet. You want to hear the sear, so you get that nice crust. Sear maybe half of the meat at a time for about 4-5 minutes on each side. Once they are done set aside on a plate and continue with the rest.

For the Siracha lime Crema, in a small bowl mix together the mayo, sour cream, sriracha, lime and honey until smooth. Pour into a little plastic bag and snip the corner off, if you want to drizzle it over.

To assemble the tacos, heat the tortillas either on the stove quick or in the oven or microwave. Then place a couple strips of meat on each one, top with a generous amount of the purple cabbage, a little avocado, cilantro and a nice drizzle of the siracha lime crema. More sauce is always a good idea! Squeeze a little lime wedge and have a margarita! These will go quick! Enjoy!
