Healthy-ish Chai Banana Muffins with Chocolate Chunks

Looking for a really quick, one bowl healthy chocolate fix for your Friday?! These muffins are soo easy to make, one bowl, overripe bananas, coconut oil, good honey, vanilla, chai spices and lots of dark chocolate. They are perfect for a quick breakfast or afternoon snack. I love to have them on hand for my baby, when he gets hungry. He loves them! And I can feel good about him eating them. Plus I always have a ton of bananas laying around so it’s a great way to use them up!

Ingredients

  • 3-4 overripe medium sized bananas (about 1 1/4 cup)
  • 1/4 cup melted coconut oil
  • 1/4 cup honey
  • 2 large eggs
  • 2 1/2 tsp. vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp. ground all-spice
  • 1/4 tsp. black pepper(I know it sounds weird but it gives the chai the extra spice)
  • 1/2 tsp. salt
  • 1 1/4 cup dark or semi-sweet chocolate chunks

Directions

Preheat oven to 350 degrees F. Line a muffin tin with paper liners and set aside.

In a large mixing bowl, mash up the bananas and stir in the coconut oil, honey, eggs, and vanilla. Stir until all combined. Add in the flour, baking soda, cinnamon, ginger, cardamom, all-spice, salt and black pepper. Mix until it’s all combined scraping the sides of the bowl with a rubber spatula. Fold in the chocolate chunks.

Scoop the batter evenly into the prepared muffin cups. Transfer to the oven and bake for about 20 minutes until they are puffed up and golden on top and pass the toothpick test. Insert a toothpick into the center and if it comes out clean they are ready. Let cool slightly and serve with a little maple or honey butter! Enjoy!
