Healthy Banana Zucchini Bread with Dark Chocolate Chips

I always love having a quick and easy bread on hand all the time. I make zucchini bread and banana bread quite a bit but with so much growing in my garden right now and a baby that loves bananas I’ve been tending to have a lot of both bananas and zucchini on hand. So I decided what better way to use them both up then to combine the two together, and let me tell you!!! It’s super healthy, no refined sugar or butter, lots of fresh zucchini to get the vegetable into the picky eater. A couple over ripe bananas, maple syrup for some sweetness and puddles of dark chocolate. It’s the best!!

Ingredients

  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup or honey
  • 2 eggs
  • 1 cup ripe bananas (2 1/2 medium or 2 large)
  • 1/4 cup milk (almond or soy)
  • 1 1/2 cup zucchini, grated
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 3/4 cup all-purpose flour
  • 1 1/2 cups dark chocolate chips

Directions

Preheat oven to 325 degrees F.

Start by grating the zucchini with a box grater onto a large clean dish towel or paper towel. Once grated ring out all the access liquid to make sure it’s pretty dry. Otherwise there will be too much access liquid. Then set aside.

In a large bowl using a fork or potato masher, mash up the bananas and stir in the melted coconut oil, maple syrup, eggs, vanilla extract and milk. Stir until all well combine and then gently fold in the zucchini.

Next add the dry ingredients, baking soda, salt, cinnamon and flour. Then lastly mix in the chocolate chips!

Mix everything together just until it’s all incorporated. Try not to over mix it. Pour batter into a greased loaf pan and bake for about 55-60 minutes just until you can insert a toothpick and it comes out clean. Let sit for a minute and then slice into it! Enjoy warm by itself or with a little smear of butter or jam and a large cup of coffee!!!
