Halloumi Crusted Chicken with Mediterranean Farro`

Well I hope everyone had a wonderful holiday season!! I found this recipe of halloumi crusted lamb and thought it would be fun with chicken to make it a little lighter. If you have never had halloumi before, let me introduce you. It’s a cheese that you can grill. So it gets amazing grill marks with a salty smoky flavor. Paired with the Mediterranean farro its such a light burst of flavors and textures together that makes this dish so much fun to make. Perfect for that new years resolution!

 

Halloumi Crusted Chicken

 

Ingredients

  • 3 tbsp. olive oil
  • 2 chicken breast, boneless and skinless
  • ½ cup all-purpose flour
  • 1 egg
  • 1 cup panko breadcrumbs
  • ½ cup grated halloumi
  • salt and black pepper

 

Directions

Preheat oven to 350 degrees F.

 

To bread the chicken you need three shallow pans. In the first one place the flour; second one the whisked egg, and in the third combine the halloumi, bread crumbs and salt and pepper.

 

Dredge the first chicken breast into the flour and shake off any excess flour. Place directly into the egg wash and then finally into the breadcrumbs and halloumi. Shake off excess and set aside. Continue with the second chicken breast.

In a medium sauté pan heat the olive oil to medium high heat. Place both chicken breast into the hot oil and let cook until golden on each side. About 3-5 minutes on each side. Try to only flip once to keep the beautiful crust on the chicken. Place in the oven to finish the cooking, about 7-8 minutes just until the chicken reaches above 165 degrees F. Keep warm while you make the Mediterranean farro.

 

Mediterranean Farro

 

Ingredients

  • 2 cups farro, cooked
  • ½ cup English cucumber, sliced
  • 1/3 cup kalamata olives
  • 2 tbsp. red onion, small diced
  • 1 tbsp. garlic, peeled and minced
  • 1 cup cherry heirloom tomatoes
  • 1 tbsp. capers
  • 2 tbsp. parsley, chopped
  • 2 tbsp. basil, chopped
  • 1 lemon, zest and juiced
  • ¼ cup olive oil
  • salt and black pepper

 

 

Directions

Bring 3 cups of water to slow boil in medium sauce pan. Add the farro and cover. Cook just until tender about 10-12 minutes. Add to large bowl and add all the other raw ingredients. Mix until all combined. Set aside.

Tzatziki Sauce 

Ingredients

  • 1 cup low-fat plain yogurt
  • ½ cup English cucumber, sliced
  • 1 lemon zest and juice
  • Season with salt and pepper

 

Directions

Mix all ingredients until combined in a small bowl.

 

To plate; place a small spoonful of the tzatziki sauce on the plate and a nice big spoon of the Mediterranean farro then top with the halloumi crusted chicken garnish with parsley and serve immediately!! Hope you enjoy as much as we did!!
