Guinness Beef Stew

This traditional Irish stew is just so hearty and comforting. When you need something easy at the end of the day. All made in one pot and in about 45 minutes. Tender beef is stewed together with Guinness beer, beef stock and root vegetables with lots of herbs. Serve it with Irish soda bread or crusty bread to soak it all up.

Ingredients

  • 2 tbsp neutral oil
  • 4 tbsp butter
  • 1 lb. beef chuck stew meat
  • 1/2 yellow onion, peeled and medium diced
  • 4-5 garlic cloves, peeled and minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, medium diced
  • 1 russet potato, medium dice
  • 1 cup mushrooms, sliced
  • 2 tbsp. flour
  • 1 bottle (11 oz) Guinness Stout
  • 1 cup beef stock, unsalted
  • 1/4 cup herbs, parsley, thyme and rosemary
  • salt and black pepper

Directions

In a large Dutch oven over medium heat add the neutral oil and 2 tbsp. butter, and melt them together. Add in the beef stew meat and season with salt and black pepper. Cooking until just starting to get a little color, about 5 minutes. Then spoon the meat onto a plate and set aside.

In the same pot add in the remaining 2 tbsp butter, onions, garlic, carrots, celery, potatoes, and mushrooms. Season again with salt and pepper. Let the vegetables cook down for about 5-7 minutes then add in the flour. Stirring to coat everything. Cook for an additional minute. Then add the beef back in along with the Guinness, beef stock, and herbs, scraping up the bottom of the pan. Bring the stew up to a boil and then reduce down to a low simmer. Let it simmer so everything will come together for about 30 minutes.

Season to taste and ladle into serving bowls along with crusty bread and garnish with herbs. Enjoy!
