Green Goddess Halloumi Brown Rice Bowl

In an effort to start eating really healthy in the new year this is going to you be a new favorite. Simply roasted vegetables with a little olive oil, salt and black pepper, seared halloumi, bright vibrant green goddess sauce all served over brown rice. This is one of those recipe I kind of stumbled across. I wasn’t planning on making dinner last night, we were going to go out. But then it got to be too late to take kids out and I needed to clean out the fridge so here we are. I had some random vegetables in the fridge and a block of halloumi. So what’s better?!

Ingredients

  • 2 cups cooked brown rice
  • 2 tbsp olive oil
  • salt and black pepper
  • 1 cup broccoli florets
  • 1 1/2 cups brussels sprouts, halved
  • 1 zucchini, medium dice
  • 1 block halloumi, sliced
  • green goddess sauce

Green Goddess Sauce

  • 1 bunch cilantro with stems
  • 1/2 jalapeño pepper, (seeds removed if you want it less spicy)
  • 1 garlic clove, peeled
  • 1 lime juiced
  • 2 tbsp. honey
  • 1/4 cup greek yogurt
  • salt and black pepper

Directions

Preheat the oven 425 degrees. Spread the Brussels sprouts, zucchini and broccoli out in an even layer on a rimmed baking pan. Drizzle with olive oil and season with salt and black pepper. Place in the oven for about 20 minutes until everything is tender and slightly charred. Love a crispy Brussels sprout!

Heat a medium saute pan with a little bit of olive oil over medium high heat. Pat the halloumi dry with a paper towel. Slice and place the slices onto the saute pan. Let them cook for about 2 minutes or so on each side until golden and crisp. Remove from heat and set aside.

Meanwhile for the green goddess sauce, in a blender add the cilantro, jalapeño pepper, garlic, lime juice, honey, Greek yogurt and blend it all together until really smooth. Making sure to scrape down the sides. Season with salt and pepper.

To assemble the bowl, spoon the brown rice on the bottom, add the roasted vegetables, and the seared halloumi. Then spoon on the green goddess sauce and enjoy being the goddess that you are!!
