Garlic Herb Brioche Rolls

Garlic herb brioche rolls! I always love my carbs and a good dinner roll with any meal is just the best! These have a nice crust on the outside and light and fluffy chew on the inside, swirled with garlic and herbs, so delicious. Put a nice smear of butter on them and you’re good to go!

Ingredients

  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 tsp. kosher salt
  • 1 package or 2 1/2 tsp. dry active yeast
  • 2/3 cup warm whole milk
  • 1 tbsp. honey
  • 3 eggs, 2 for the dough and 1 for egg wash, brushing on top
  • 1 stick (1/2 cup) unsalted butter room temperature, separated
  • 3-4 garlic cloves, peeled and minced
  • 1/2 cup fresh herbs, (rosemary, sage, thyme) minced

Directions

Grease a large bowl. In a large stand mixer with a dough hook attachment, combine the flour, yeast and salt. Create a well in the center and add in the warm whole milk, honey, 2 eggs and 2 tbsp. butter. Mix the dough all together until it is slightly sticky and smooth. Mix/knead for about 5 minutes. You can add a little bit more flour if it seems too sticky. Cover it with a towel or plastic wrap and let sit in a warm area for about 1 hour, until doubled in size.

Once it has risen, in a small bowl mix together the garlic, herbs and remaining butter, and set it aside.

Punch down the dough and turn it out onto a floured work surface and roll it out to a large rectangle (about 12×18). Using your hands spread the garlic herb butter evenly all over the dough, leaving about 1 inch boarder. Starting with the edge closest to you, roll the dough into a log. Then cut into 8 pieces. Pinch the edges shut and roll into smooth balls.

Place dough balls into a greased loaf pan, cover and let rise for another 30-45 minutes. Once it has doubled again preheat the oven to 450 degrees. Brush the tops with egg wash. Bake for 10-15 minutes. Reduce heat to 350 degrees and then bake for an additional 20-25 minutes until the tops are beautifully golden. Serve warm with a little more butter!!
