Frozen Peanut Butter Cups
Well these are my new fav summer treat. Frozen creamy peanut butter cups and covered in dark chocolate. I folded some graham cracker crumbs into the peanut butter for a little texture and let me tell you, you’re going to be obsessed with every bite. They will need to be a constant in the freezer all summer long.
Ingredients
- 1 cup creamy peanut butter
- 1 cup plain Greek yogurt
- 2 tsp. vanilla extract
- 1/2 cup graham cracker crumbs
- 1/2 cup honey or maple syrup
- 24 ounces dark chocolate chopped
- 2 tbsp. coconut oil
- flaky sea salt
Directions
In a large mixing bowl mix together the peanut butter, Greek yogurt,, vanilla, graham crackers and honey. Stir together until everything is combined. Set aside.
In another medium bowl combine together the chopped dark chocolate and coconut oil. Place in the microwave and melt on 30 second intervals, stirring in between until fully melted.
Place muffin cups on a rimmed baking pan. Pour about 1-2 tbsp of the melted chocolate into the bottom of each one spreading it around and up the edges about half way. Place into the freezer to let the chocolate harden for about 5-10 minutes.
Scoop 1 1/2-2 tbsp peanut butter mixture into each cup and spread it out to the edges. Then cover each cup with the remaining melted chocolate. Place back in the freezer for about 30 minutes until they cups are frozen. Sprinkle sea salt over the top to garnish and enjoy!
