Frozen Brownie Ice Cream Bars

With Valentine’s Day right around the corner, all I keep thinking about is chocolate and this is just the indulgent fix. Layers of rich fudge brownie topped with luscious vanilla ice cream, and then coated in chocolate ganache and then dipped into creamy caramel. It’s the best guilty pleasure!

Brownies

Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 eggs, room temperature
  • 3/4 cup cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp. salt
  • 1 cup melted unsalted butter
  • 1 tbsp. coffee
  • 1 tbsp. vanilla extract
  • 3 cups vanilla ice cream
  • 2 cups warm caramel sauce for dipping (homemade or store bought)

Directions

Preheat the oven to 350 degrees, line a 9×13 baking pan with parchment paper.

In a large bowl combine the melted butter, eggs, coffee and vanilla, whisk until well combined. Then add in the white and brown sugars, and sift in the cocoa powder, flour, salt. Mix everything until it’s all well incorporated.

Pour batter into prepared pan, smooth evenly with a rubber spatula, and bake for about 25-30 minutes. Until the center is set and when a toothpick inserted comes out clean.

Cool completely then top with vanilla ice cream, cover with plastic wrap and place back in the freezer. Cut into bars and then dip each one into the chocolate ganache. Cool the ganache slightly before dipping the bars.

Chocolate ganache

  • 3 (4 oz) dark chocolate bars or 1 1/2 cups chocolate chips
  • 3/4 cup heavy cream
  • 1 tsp. vanilla extract

Chop the chocolate finely and place into a double boiler over simmering water, make sure the bowl doesn’t touch the water. Pour in the heavy cream and vanilla and over medium heat, melt the chocolate until just smooth. You can also do it in the microwave. Heat for 30 seconds and stir between bursts, just until melted.
