Citrus Loaf

  • 2 1/4 cups superfine almond flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3 eggs, room temperature
  • 1 tsp orange blossom extract
  • 1 tsp. almond extract
  • 1/2 cup honey
  • 1/2 cup plain Greek yogurt
  • 1/4 cup coconut oil, melted
  • 2 1/4 tbsp. citrus zest (1/2 grapefruit, 1/2 orange, 1 lime, 1 lemon)

Blood Orange Glaze

  • 1 cup powdered sugar
  • 1/3 cup blood orange juice

Citrus Sugar

  • 2 tbsp granulated sugar
  • 1 tsp orange zest
  • 1 tsp lime zest
  • 1 tsp lemon zest

Directions

Preheat the oven to 350 degrees. Spray the inside of a loaf pan or line with parchment and set aside.

In a large mixing bowl combine together the almond flour, baking powder, baking soda, and salt. Whisk together. Then in a medium bowl combine together the eggs, extracts, honey, yogurt, coconut oil, and zest. Whisk until combined then pour into the dry ingredients. Mix it all together with a rubber spatula until fully combined. Pour into the loaf pan.

For the citrus sugar, in a small bowl combine together the sugar and zest and use your fingers to mix it all together. Sprinkle over the top of the loaf. Place in the oven to bake for about 55 minutes – 1 hour. Or until it’s golden, and when a toothpick inserted comes out clean.

While it’s baking make the blood orange glaze. In a small bowl combine together the blood orange juice and powered sugar. Whisk together until smooth. When the loaf is done, and slightly cooled, remove from the pan and pour the glaze over the top evenly. Slice and enjoy!
