Cinnamon Chip Peanut Butter Banana Muffins filled with Cream Cheese

Homemade muffins are great for a quick snack or breakfast with a large cup of coffee. They are healthy(ish) and so easy to make in one bowl! I always love the peanut butter banana combination and then decided to add some cinnamon chips and then just a little cream cheese in the center for that added creamy goodness and a little indulgence!

Ingredients

  • 4 tbsp. unsalted butter, melted
  • 3/4 cup creamy natural peanut butter
  • 2 medium ripe bananas
  • 1/3 cup maple syrup
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 cup milk, (whole milk or almond milk)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cup all-purpose flour
  • 1/2 cup cinnamon chips
  • 1/2 cup cream cheese, softened

Directions

Preheat oven to 350 degrees F. and spray a muffin tin with non-stick spray.

In a large bowl melt the butter whisk in the peanut butter until smooth, then mash in the bananas until there’s small lumps and all combined. Then stir in the maple syrup, eggs, vanilla, and milk whisk until all smooth. Making sure to scrap down the sides.

Add in the baking soda, salt and flour. Mix it all together using a rubber spatula until well combined. Making sure to scrape the sides and bottom of the bowl really good, and not to over mix. Then fold in the cinnamon chips.

Scoop the batter into the muffin tins. Add about 2 tbsp. of the batter into the bottom 1 tsp. cream cheese and then top with another tbsp. of the batter on top. Making sure the cream cheese is completely covered and continue with the rest of the muffins.

Bake in the oven for 15-17 minutes just until golden and firm to the touch. Use a tooth pick and insert into the center and if there is no batter that comes out on the tooth pick they are ready! Let cool for a minute and then serve with your favorite cup of coffee!!
