Chicken and Vegetable Peanut Noodles

Crisp vegetables with pulled rotisserie chicken, scallions, dry roasted peanuts and lots of creamy umami peanut sauce. This dish is really easy to put together and a great way to use up extra vegetables in the fridge. I like the combination of the fresh vegetables and the cooked together. But do whatever you feel. It’s great for leftovers and you can eat it warm, room temp or cold!

Ingredients

  • 1 lb. Chinese noodles
  • 2 tbsp. neutral oil
  • 1 1/2 cup mushrooms
  • 1 cup broccoli florets
  • 1 cup bell peppers, red, yellow or orange, medium dice
  • 1 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/4 cup English cucumber, sliced
  • 2 scallions
  • 2 cups rotisserie chicken, pulled
  • garnish, lime wedges, cilantro, dry roasted peanuts

Peanut Sauce

  • 1 1/2 cup creamy peanut butter
  • 3/4 cup low sodium soy sauce
  • 1/2 cup rice wine vinegar
  • 1/4 cup honey
  • 2 tbsp. fresh ginger, peeled and minced
  • 4-5 garlic cloves, peeled and minced
  • sriracha or your favorite hot sauce (optional)

Directions

Bring a large pot of salted water to a low boil.

In a large saute pan over medium heat, add the oil and mushrooms. Season with salt and pepper and let them get a little softer. Then add in the broccoli, and peppers. Add 1/2 cup of water to steam the vegetables and continue to cook over medium until everything is tender.

Prep the fresh vegetables, carrots, red cabbage, cucumbers, scallions and set them off to the side on a plate to add at the end.

For the peanut sauce, add the creamy peanut butter, soy sauce, rice wine vinegar, honey, ginger, garlic and hot sauce if you’re using it and whisk until everything is smooth.

Cook the noodles for 3 minutes or according to packaging. Then in a large servings bowl add the noodles, peanut sauce, cooked vegetables and pulled chicken. Mix it all together. Season with salt and black pepper. You may need a ladle or two of the cooking liquid from the noodles to thin the sauce. Mix it all together until it’s combined, then add the fresh vegetables and garnishes over the top. Enjoy!
