Blueberry Oat Crumble Bars

Homemade blueberry jam layered between a chewy oat bar and crumbly topping. Perfect for quick on the go breakfast, afternoon snack or with a scoop of ice cream for dessert. The are great warm, room temperature or straight from the fridge. We literally couldn’t stop eating them.

Blueberry Jam

  • 2 pints blueberries
  • 1/3 cup sugar
  • 1 tsp. lemon juice
  • 1 tsp. vanilla extract

Oatmeal Bar

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg, room temperature
  • 1 tsp. vanilla extract
  • 2 tsp. ground cinnamon
  • 1 tsp. nutmeg
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp. baking soda
  • pinch of salt
  • 1 cup old fashioned oats

Directions

In a medium sauce pan over medium heat, cook together the blueberries, sugar, and lemon juice for about 15 minutes. Once they start to release the juices smash them down with a fork. Then let continue to cook until it’s thickened and jam like. Remove from heat and stir in the vanilla extract and let cool slightly.

Preheat the oven to 350 degrees.

Line an 8×8 baking pan with parchment paper and set aside.

In a large mixing bowl beat together the butter and sugars until light and fluffy. Then mix in the egg and vanilla until incorporated.

In a separate bowl mix together the dry ingredients, cinnamon, nutmeg, flour, baking soda, salt and oats. Pour into the wet ingredients and mix together. Press half of the mixture into the bottom of the prepared baking pan. Pour the jam over the layer and then crumble the other half over the top. Bake in the oven for about 30 minutes until crisp and golden on top. Let cool slightly before serving. Enjoy!
