Basil Limoncello

So much fresh bright flavor infused into this vodka. The balance of the lemon to the basil is so subtle, they balance out perfect, just giving that slight sweet herb balance. Drink this as an aperitif or after dinner drink. Perfect palate cleanser!

 

Ingredients

  • 10 lemons
  • 1 (750-ml) bottle vodka
  • 2 cups fresh basil leaves
  • 3 1/2 cups water
  • 2 1/2 cups sugar

Directions

Using a vegetable peeler, remove the peels from the lemons in long strips (keep the lemons/juice for another time) Trim away any white pith from the peels, it will make the limoncello bitter. Discard pith, and place the lemon peels into a 2-qt pitcher. Add the basil to the lemon peels and pour over the vodka and cover. Let this sit for 4 days at room temperature.

Combine water and sugar together in small sauce pan and bring to boil and stir until the sugar dissolves about 5 minutes. Cool completely. Pour over the vodka mixture. Cover and let stand over night at room temperature.

Finally!!! Strain into bottles, discard the peels and basil and transfer limoncello into bottles. Seal the bottles and chill until cold, about 4 hours.
