Banana Streusel Muffins

I’m always looking for ways to use up over ripe bananas aside from our everyday smoothies. With one bowl, a couple over ripe bananas these muffins are so quick and satisfying!! Perfect for any quick breakfast, snack or late dessert. The crunchy oatmeal streusel really makes it.

Ingredients

  • 4 overly ripe bananas (about 1 1/4 cups mashed)
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 1/2 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3/4 cup brown sugar, packed
  • 3/4 cup old fashioned oats
  • 1/2 cup all-purpose flour
  • pinch of salt
  • 1 tsp. cinnamon
  • 6 tbsp. butter melted

Directions

Preheat the oven to 350 degrees.

In a large bowl stir together the mashed bananas, melted coconut oil, honey, eggs, and vanilla mix until just combined. Then stir in the flour, baking soda, cinnamon and salt. Stir it all together until just combined, use an ice cream scoop to fill the lined muffin tins.

Then in another bowl add the brown sugar, old fashioned oats, flour, salt, cinnamon mix it all together. Then pour in the melted butter, mix until it’s crumbly and add a little or lot to the top of each muffin. Bake for about 15 to 18 minutes until they are golden and when a tooth pick is inserted it comes out clean.
