Banana Bread with Peanut Butter and Chocolate Chips

With everyone home right now making bread, like banana bread and peanut butter bread, I was playing around in the kitchen and decided to combine the two together. It is magical! Sweet delicious ripe banana, creamy peanut butter swirled in and dark chocolate..I mean?! It is so good and so easy to make!

Ingredients

  • 1/3 cup coconut oil, melted
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 cup mashed ripe bananas (2 1/2 medium or 2 large)
  • 1/4 cup milk or almond milk
  • 1 tsp vanilla extract
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1 3/4 cup all-purpose flour
  • 1 cup dark chocolate chips
  • 1/2 cup creamy peanut butter

Directions

Preheat the oven to 325 degrees. Grease loaf pan.

In a large bowl using a fork or potato masher mash up the bananas, then add in the coconut oil, honey or maple syrup, eggs, milk and vanilla. Mix all together until just combined. Then add in the flour, baking soda, salt and cinnamon. Mix all together so everything is evenly combined. Gently stir in the chocolate chips and pour into the prepared loaf pan.

Once in the pan take the peanut butter and spoon teaspoons of the peanut butter over the top of the bread and then using a knife swirl it through the bread.

Bake for about 55-60 minutes, until a toothpick inserted comes out clean. Let cool slightly and enjoy!!!
