Apple Butter Pop Tarts

Apple Butter Pop tarts! Bringing out the inner child, but so much better than store bought! These are soo easy to make and perfect for any breakfast or a quick snack. I use either leftover pie crust dough or store bought and you can make as many as you would like! But obviously homemade is better!

Ingredients

Dough

  • 2 1/4 cups all-purpose flour
  • 1 tsp. salt
  • 1/4 cup sugar
  • 2 sticks unsalted butter, cubed
  • 1/4 cup cold water
  • egg wash
  • cinnamon sugar

Apple Butter Filling

  • 3 lbs apples, peeled and diced (use your favorites)
  • 1 1/4 cup brown sugar
  • 1/2 cup maple syrup
  • 2 tsp. ground cinnamon
  • 1 tsp. freshly grated nutmeg
  • 1 tsp. ground ginger
  • 1/2 tsp. ground cloves
  • 1/2 tsp. kosher salt 
  • 1 tsp. vanilla extract

Directions for the dough

Preheat oven to 350 degrees.

In a food processor with a metal blade attachment add the flour, salt, sugar and pulse together. Then add in the cubed cold butter and pulse until it resembles course sand. Then with the motor running add in the water until the dough just starts to come together. Dump it out onto a floured surface and gently knead it together until smooth. Wrap in plastic wrap and chill for 20-30 minutes.

Turn the dough out onto a floured work surface, and roll into 1/8 inch thickness. Cut into 4×3 inch rectangles. Place 1 tbsp. filling in the center of 1/2 the squares. Egg wash the edges and cover with the other 1/2 of the rectangles. Seal the edges using a fork and brush the tops with egg wash and sprinkle a little cinnamon sugar over the top. Then make a little slit in the top to let steam escape.

Place poptarts on a baking pan lined with parchment and bake for about 12-15 minutes until golden. Let cool and enjoy!

Directions for Apple Butter

Place everything into a large sauce pan over medium heat. When the apples start to release the juices reduce the heat to low and let it simmer for 2-3 hours stirring often, until the apples are really soft and it’s getting thicker, and a deep rich golden. Remove from heat and let cool for a minute then blend in a blender until really smooth.
