Strawberry Chia Seed Pudding

Happy spring friends!! Strawberry chia seed pudding, I love this for breakfast so much. It’s so high in protein and fiber and the girls couldn’t eat it fast enough. Fresh strawberries are pureed and strained of the seeds, then folded into a sweetened Greek yogurt with maple syrup and a little vanilla. Then stir in the chia seeds. Top it with more strawberries, and maple syrup if you wish. I even ended up putting some coconut granola on top and it was so delicious! Hope you love it as much as we did.

Ingredients

  • 2 cups fresh strawberries, tops removed
  • 2 cups Greek yogurt
  • 1/4 cups pure maple syrup
  • 2 tsp. vanilla extract
  • 1/2 cup chia seeds

Directions

Trim off the tops of all the strawberries and add to a blender. Blend until a smooth puree. Pour puree through a fine mesh strainer into a bowl to remove all the seeds. Set aside.

In a medium bowl combine the Greek yogurt, maple syrup and vanilla. Then fold in the strawberry puree and chia seeds. Mix until just combined. And thats it!! Pour into glass jars and let it set in the fridge for 1-2 hours.

Top with more strawberries, maple syrup or granola. Enjoy!!
